Maybe this is the hippy version of borscht but it was GOOD!
about one box of vegetable broth add water to taste almost a box.
Chop one large beet the size of a baseball or the equivalent.
Chop half of prior amount of Celeriac root. Cook for awhile til they start to get soft.
Add a few chopped carrots about the same amount as beets. Cook.
Add 1/4 (normal sized) purple cabbage chopped.
Add freshly shredded turmeric root. about 1/4 of a piece just use a little if you are not familiar with turmeric. Add a touch of shredded ginger, a splash of vinegar, a couple splashes of lemon juice and a pinch of salt. Cook until vegetables are cooked to your liking. I usually cook for only a couple minutes after I add the cabbage because don't like overcooked vegetables.
I also made some vegan "sour cream" to put on top the recipe still needs some work but it was basically tofu, soy yogurt, lemon juice, apple cider vinegar, salt and a bit of turmeric.
